- 3/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup old-fashioned oats
- 1 can sweetened condensed milk
- 6 tablespoons lemon juice (about 2 lemons)
- 1 tablespoon lemon zest (from about 1 lemon)
Instructions
- Preheat your oven to 350°F (177°C). Line an 8-inch square baking pan with parchment paper.
- In a mixing bowl, beat together the softened butter and brown sugar until combined. Add the vanilla and mix well.
- Gradually add flour, baking powder, salt, and oats; mix until crumbly.
- Press slightly more than half of the crumble mixture into the bottom of the prepared pan and bake for 12 minutes.
- Whisk together the sweetened condensed milk, lemon juice, and lemon zest in another bowl until smooth.
- Pour the lemon filling over the pre-baked crust and sprinkle with the remaining crumble mixture.
- Bake for an additional 22–25 minutes or until edges are golden and center is set. Let cool completely before slicing.
