  • 7 tablespoons unsalted butter, softened
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup old-fashioned oats
  • 1 can sweetened condensed milk
  • 6 tablespoons lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest (from about 1 lemon)


Instructions

  1. Preheat your oven to 350°F (177°C). Line an 8-inch square baking pan with parchment paper.
  2. In a mixing bowl, beat together the softened butter and brown sugar until combined. Add the vanilla and mix well.
  3. Gradually add flour, baking powder, salt, and oats; mix until crumbly.
  4. Press slightly more than half of the crumble mixture into the bottom of the prepared pan and bake for 12 minutes.
  5. Whisk together the sweetened condensed milk, lemon juice, and lemon zest in another bowl until smooth.
  6. Pour the lemon filling over the pre-baked crust and sprinkle with the remaining crumble mixture.
  7. Bake for an additional 22–25 minutes or until edges are golden and center is set. Let cool completely before slicing.
