- 1 pound lean ground beef
- 1 cup chunky salsa
- 1 (10-ounce) can red enchilada sauce
- 8 (8-inch) tortillas
- 1 (8-ounce) package shredded Mexican cheese
Instructions
- Preheat your oven to 350°F and lightly spray a 9×13-inch baking dish with nonstick cooking spray.
- In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat and stir in the chunky salsa until heated through.
- Pour half of the red enchilada sauce into the bottom of the baking dish.
- Warm the tortillas as per package instructions, then fill each tortilla with about 1/4 cup of the beef mixture and top with cheese before rolling tightly.
- Place rolled tortillas seam side down in the baking dish, cover with remaining enchilada sauce and cheese, then cover with aluminum foil.
- Bake for 30 to 35 minutes until heated through and bubbly.
