  • 1 pound lean ground beef
  • 1 cup chunky salsa
  • 1 (10-ounce) can red enchilada sauce
  • 8 (8-inch) tortillas
  • 1 (8-ounce) package shredded Mexican cheese


Instructions

  1. Preheat your oven to 350°F and lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat and stir in the chunky salsa until heated through.
  3. Pour half of the red enchilada sauce into the bottom of the baking dish.
  4. Warm the tortillas as per package instructions, then fill each tortilla with about 1/4 cup of the beef mixture and top with cheese before rolling tightly.
  5. Place rolled tortillas seam side down in the baking dish, cover with remaining enchilada sauce and cheese, then cover with aluminum foil.
  6. Bake for 30 to 35 minutes until heated through and bubbly.
