  • 3 tbsp lemon juice

  • 1 1/2 cups yogurt (for tzatziki)
  • 2 cucumbers (one for tzatziki, one for serving)
  • 4 garlic cloves
  • 1 tbsp fresh dill
  • 6 pita bread
  • 3 tomatoes (diced into 1/2-inch pieces)
  • 1/4 red onion (thinly sliced)
  • 2 tbsp parsley (chopped)
  • 1.5 tbsp olive oil (for drizzle)
  • Salt and pepper to taste
  • Feta cheese (optional, for topping)


Instructions

  1. Marinate the Chicken: In a bowl, mix yogurt, lemon juice, olive oil, apple vinegar, salt, pepper, and oregano. Add chicken and coat well. Cover and refrigerate for at least 30 minutes.
  2. Make the Tzatziki Sauce: Whisk together yogurt, olive oil, lemon juice, apple vinegar, salt, dill, minced garlic, and grated cucumber in another bowl. Mix until combined and refrigerate.
  3. Cook the Chicken: Heat a griddle or skillet over medium-high heat. Cook marinated chicken for 6-8 minutes until golden brown and fully cooked.
  4. Assemble Your Gyros: Warm pita bread on the griddle. Fill each pita with chicken and top with tzatziki sauce, diced tomatoes, sliced cucumbers, red onion, parsley, and feta cheese if desired.
