  • 6 strips chicken bacon (hickory smoked)
  • 2 jalapeños (deseeded and finely diced)
  • 4 oz cream cheese (softened)
  • 1/2 cup mozzarella cheese
  • 3/4 cup shredded Monterey Jack cheese
  • 2 large flour tortillas
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp smoked paprika
  • 1 tsp fresh lime juice
  • 1/2 tsp salt
  • 1/4 tsp pepper


Instructions

  1. In a mixing bowl, combine softened cream cheese, mozzarella, Monterey Jack cheese, diced jalapeños, garlic powder, onion powder, smoked paprika, lime juice, salt, and pepper. Mix well.
  2. Cook chicken bacon in a skillet over medium heat until crispy. Drain on paper towels and chop into small pieces.
  3. Spread half of the cheese mixture over one half of each tortilla. Top with chicken bacon and fold the tortillas.
  4. Cook the folded quesadillas in the skillet for about 3-4 minutes on each side until golden brown.
  5. Cut into wedges and serve hot with dipping sauces.
