- 6 strips chicken bacon (hickory smoked)
- 2 jalapeños (deseeded and finely diced)
- 4 oz cream cheese (softened)
- 1/2 cup mozzarella cheese
- 3/4 cup shredded Monterey Jack cheese
- 2 large flour tortillas
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp smoked paprika
- 1 tsp fresh lime juice
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- In a mixing bowl, combine softened cream cheese, mozzarella, Monterey Jack cheese, diced jalapeños, garlic powder, onion powder, smoked paprika, lime juice, salt, and pepper. Mix well.
- Cook chicken bacon in a skillet over medium heat until crispy. Drain on paper towels and chop into small pieces.
- Spread half of the cheese mixture over one half of each tortilla. Top with chicken bacon and fold the tortillas.
- Cook the folded quesadillas in the skillet for about 3-4 minutes on each side until golden brown.
- Cut into wedges and serve hot with dipping sauces.
