- 2 cups cooked rice (preferably day-old)
- 1 cup beef tenderloin, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 green onions, chopped
- 2 cloves garlic, minced
- 2 large eggs
- Vegetable oil for frying
Instructions
- Prepare all ingredients ahead of time. Cook rice in advance and refrigerate.
- Heat 1 tablespoon vegetable oil in a skillet over medium-high heat. Sauté beef until browned (about 5 minutes). Remove and set aside.
- In the same skillet, add remaining oil and sauté garlic for about 30 seconds.
- Stir-fry mixed vegetables for 2-3 minutes until heated through.
- Push veggies aside, crack in eggs, scramble until cooked, then mix with vegetables.
- Add the cooked rice, breaking up clumps; stir well to combine.
- Pour in soy sauce, oyster sauce, sesame oil, and black pepper; stir-fry for an additional 3-4 minutes.
- Return beef and green onions to skillet; mix well and heat through.
- Serve hot garnished with extra green onions if desired.
