  • 1.25 cups oats
  • 1 cup all-purpose flour
  • 0.5 cup cold butter, cut into 1/2-inch cubes
  • 0.25 tsp salt
  • 1/8 tsp baking soda
  • 0.66 cup brown sugar
  • 1.75 cups rhubarb, sliced into 1/2-inch thick pieces
  • 0.75 cup sugar
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 0.75 tsp vanilla extract
  • 1/4 tsp ground cinnamon


Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×13 inch baking pan with parchment paper.
  2. In a mixing bowl, combine oats, flour, salt, baking soda, and brown sugar. Add cold butter cubes and mix until crumbly.
  3. In another bowl, mix sliced rhubarb with sugar, cornstarch, water, vanilla extract, and cinnamon until combined.
  4. Press half of the oatmeal mixture into the bottom of the prepared pan as a crust. Spread the rhubarb filling evenly over the crust and sprinkle the remaining oatmeal mixture on top.
  5. Bake for 30-35 minutes until golden brown. Allow cooling before slicing into bars.
