- 1 cup all-purpose flour
- 0.5 cup cold butter, cut into 1/2-inch cubes

- 1/8 tsp baking soda
- 0.66 cup brown sugar
- 1.75 cups rhubarb, sliced into 1/2-inch thick pieces
- 0.75 cup sugar
- 1 tbsp cornstarch
- 2 tbsp water
- 0.75 tsp vanilla extract
- 1/4 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Grease or line a 9×13 inch baking pan with parchment paper.
- In a mixing bowl, combine oats, flour, salt, baking soda, and brown sugar. Add cold butter cubes and mix until crumbly.
- In another bowl, mix sliced rhubarb with sugar, cornstarch, water, vanilla extract, and cinnamon until combined.
- Press half of the oatmeal mixture into the bottom of the prepared pan as a crust. Spread the rhubarb filling evenly over the crust and sprinkle the remaining oatmeal mixture on top.
- Bake for 30-35 minutes until golden brown. Allow cooling before slicing into bars.
