- 1.25 lbs chicken breast (cut into 1-inch chunks)
- 2 tbsp smoked paprika
- 15 oz tomato sauce
- 1/3 cup pure maple syrup
- 4 cups red cabbage (finely shredded)
- 2 cups carrots (grated)
- 2.5 cups jasmine rice (cooked)
- 3 tbsp apple cider vinegar
- 1 tbsp lime juice
- 1 1/2 tbsp avocado oil
- 1 tbsp brown sugar
- 1 1/2 tbsp onion powder
- 3/4 tsp chili powder
- 1/2 tsp cumin
- 1 1/2 tsp salt
- 1 tsp cracked black pepper
Instructions
- Gather all ingredients and chop the vegetables. Cut the chicken into bite-sized pieces.
- In a mixing bowl, combine smoked paprika, brown sugar, garlic powder, onion powder, chili powder, cumin, salt, and black pepper to create the spice mix.
- Heat avocado oil in a large skillet over medium heat. Add chicken pieces and sprinkle half of the spice mix over them. Cook until browned on all sides.
- In another bowl, mix tomato sauce, maple syrup, apple cider vinegar, lime juice, and remaining spice mix to make the BBQ sauce.
- Pour the sauce over the cooked chicken in the skillet and let it simmer for 10-15 minutes until slightly thickened.
- To serve, place jasmine rice at the bottom of each bowl and top with BBQ chicken mixture followed by shredded cabbage, grated carrots, diced cucumber, sliced avocado, and chopped cilantro.
