Ingredients

  • 1.25 lbs chicken breast (cut into 1-inch chunks)
  • 2 tbsp smoked paprika
  • 15 oz tomato sauce
  • 1/3 cup pure maple syrup
  • 4 cups red cabbage (finely shredded)
  • 2 cups carrots (grated)
  • 2.5 cups jasmine rice (cooked)
  • 3 tbsp apple cider vinegar
  • 1 tbsp lime juice
  • 1 1/2 tbsp avocado oil
  • 1 tbsp brown sugar
  • 1 1/2 tbsp onion powder
  • 3/4 tsp chili powder
  • 1/2 tsp cumin
  • 1 1/2 tsp salt
  • 1 tsp cracked black pepper


Instructions

  1. Gather all ingredients and chop the vegetables. Cut the chicken into bite-sized pieces.
  2. In a mixing bowl, combine smoked paprika, brown sugar, garlic powder, onion powder, chili powder, cumin, salt, and black pepper to create the spice mix.
  3. Heat avocado oil in a large skillet over medium heat. Add chicken pieces and sprinkle half of the spice mix over them. Cook until browned on all sides.
  4. In another bowl, mix tomato sauce, maple syrup, apple cider vinegar, lime juice, and remaining spice mix to make the BBQ sauce.
  5. Pour the sauce over the cooked chicken in the skillet and let it simmer for 10-15 minutes until slightly thickened.
  6. To serve, place jasmine rice at the bottom of each bowl and top with BBQ chicken mixture followed by shredded cabbage, grated carrots, diced cucumber, sliced avocado, and chopped cilantro.
