  • 6 oz black olives (drained and sliced into 1/4-inch rounds)
  • 1 1/2 green bell pepper (diced into 1/2-inch pieces)
  • 1/2 cucumber (diced)
  • 1 pint grape tomatoes (sliced lengthwise into halves)
  • 10 oz mozzarella (cubed)
  • 3/4 tsp salt
  • 3/4 tsp black pepper
  • 1/4 cup fresh parsley, chopped


Instructions

  1. Cook the rotini pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, whisk together Greek yogurt, olive oil, apple vinegar, minced garlic, chopped shallot, Italian seasoning, salt, and black pepper until smooth.
  3. Chop all vegetables into bite-sized pieces.
  4. In a large bowl, combine the cooled pasta with chopped vegetables and mozzarella cubes. Pour the dressing over the mixture and toss gently to coat.
