Ingredients

- 6 oz black olives (drained and sliced into 1/4-inch rounds)
- 1 1/2 green bell pepper (diced into 1/2-inch pieces)
- 1/2 cucumber (diced)
- 1 pint grape tomatoes (sliced lengthwise into halves)
- 10 oz mozzarella (cubed)
- 3/4 tsp salt
- 3/4 tsp black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Cook the rotini pasta in salted boiling water until al dente. Drain and rinse under cold water.
- In a mixing bowl, whisk together Greek yogurt, olive oil, apple vinegar, minced garlic, chopped shallot, Italian seasoning, salt, and black pepper until smooth.
- Chop all vegetables into bite-sized pieces.
