  • 1.75 lb rhubarb (trimmed and cut into 1-inch pieces)
  • 3 oranges (zested and juiced)
  • 5.3 oz fresh ginger (peeled and finely grated)
  • 1/2 teaspoon fruit pectin


Instructions

  1. Prepare your ingredients by trimming the rhubarb, zesting and juicing the oranges, and grating the ginger.
  2. In a large pot, combine rhubarb, orange zest, orange juice, grated ginger, and sugar. Stir to mix well.
  3. Heat over medium heat until sugar dissolves; then bring to a boil.
  4. After boiling for about 10 minutes, add fruit pectin and continue boiling while stirring for another 15-20 minutes until thickened.
  5. Pour hot jam into sterilized jars and seal with lids while still warm. Allow to cool completely before storing.
