Ingredients
- 4 slices sourdough or white bread
- 4 ounces cream cheese or brie
- 1 cup shredded mozzarella or fontina cheese
- 3 tablespoons butter
- 1 cup fresh or frozen blueberries
- 2 tablespoons sugar
- Flaky sea salt for garnish
Instructions
- Prepare the blueberry mixture: In a small saucepan over medium heat, combine blueberries and sugar. Cook for 5-7 minutes until thickened into a jam-like consistency. Remove from heat and cool slightly.
- Assemble the sandwiches: Spread cream cheese on one side of each bread slice. On two slices, layer mozzarella over the cream cheese and spoon blueberry mixture on top. Place remaining bread slices on top, cream cheese side down.
- Cook: Heat a skillet over medium-low heat and butter the outside of each sandwich. Cook for 3-4 minutes per side until golden brown and cheese is melted.
- Serve: Let rest for 1-2 minutes before slicing diagonally. Sprinkle with flaky sea salt and serve warm.
