  • 1 1/2 cups rhubarb (diced into 1/2-inch pieces)
  • 1 cup pecans (coarsely chopped for a better crunch)
  • 1/2 cup all-purpose flour (for topping)
  • 1/2 cup brown sugar (for topping)
  • 1/4 tsp ground cinnamon (for topping)
  • 1/4 tsp salt (for topping)
  • 1/4 cup cold unsalted butter (for topping)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, whisk together the egg and brown sugar until combined. Stir in canola oil, buttermilk, and vanilla extract.
  3. In another bowl, combine flour, salt, and baking soda. Gradually add this dry mixture to the wet ingredients until just incorporated.
  4. Gently fold in diced rhubarb and chopped pecans.
  5. For the topping, mix flour, brown sugar, cinnamon, and salt; cut in cold butter until crumbly.
  6. Pour batter into the prepared loaf pan and sprinkle topping over it. Bake for 55-65 minutes or until a toothpick comes out clean.
