  • 7 oz rhubarb (sliced)
  • 6 oz blueberries
  • 4 oz sugar
  • 2.5 tbsp cornstarch
  • 1.5 tsp cinnamon
  • 1 lemon (zested and juiced)
  • 1/4 tsp ground nutmeg
  • 4 oz oats
  • 7.5 oz flour
  • 7.5 oz brown sugar
  • 1/2 tsp baking powder
  • 6.5 oz butter (cold)
  • 1/2 tsp salt


Instructions

  1. 1. Preheat your oven to 356°F (180°C).
  2. 2. In a mixing bowl, combine rhubarb, blueberries, sugar, cornstarch, cinnamon, lemon zest, and nutmeg. Mix well and set aside.
  3. 3. In another bowl, whisk together oats, flour, brown sugar, baking powder, and salt. Add cold butter cubes and mix until crumbly.
  4. 4. Spread the fruit mixture evenly in a baking dish and top with crumble mixture.
  5. 5. Bake for 30-35 minutes until golden brown and bubbly around the edges.
  6. 6. Allow to cool completely before slicing into bars.
