Ingredients
- 7 oz rhubarb (sliced)
- 6 oz blueberries
- 4 oz sugar
- 2.5 tbsp cornstarch
- 1.5 tsp cinnamon
- 1 lemon (zested and juiced)
- 1/4 tsp ground nutmeg
- 4 oz oats
- 7.5 oz flour
- 7.5 oz brown sugar
- 1/2 tsp baking powder
- 6.5 oz butter (cold)
- 1/2 tsp salt
Instructions
- 1. Preheat your oven to 356°F (180°C).
- 2. In a mixing bowl, combine rhubarb, blueberries, sugar, cornstarch, cinnamon, lemon zest, and nutmeg. Mix well and set aside.
- 3. In another bowl, whisk together oats, flour, brown sugar, baking powder, and salt. Add cold butter cubes and mix until crumbly.
- 4. Spread the fruit mixture evenly in a baking dish and top with crumble mixture.
- 5. Bake for 30-35 minutes until golden brown and bubbly around the edges.
- 6. Allow to cool completely before slicing into bars.
