  • 1 avocado, sliced
  • 4 slices of your favorite cheese (Swiss, cheddar, or provolone)
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • Butter or olive oil for grilling


Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat. Cook the chicken for about 6-7 minutes per side until fully cooked. Allow it to rest before slicing thinly.
  3. Prepare the avocado slices and cheese.
  4. Spread mayonnaise and Dijon mustard on each slice of bread. Layer the chicken, avocado, cheese, red onion, and tomato on two slices; top with remaining bread.
  5. Grill in a skillet over medium heat with butter or olive oil until golden brown and cheese is melted (about 3-4 minutes per side). Press down gently while cooking.
