  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough or ciabatta)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling


Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat; cook chicken for about 6–7 minutes per side until fully cooked. Let rest before slicing.
  3. Slice the avocado and cheese; set aside.
  4. Spread mayonnaise and Dijon mustard on bread slices. Layer chicken, avocado, cheese, red onion, and tomato on two slices.
  5. Top with remaining bread slices (mayo side down). Grill in a skillet with butter or olive oil until golden brown and cheese is melted (about 3–4 minutes per side).
