  • 2 medium zucchinis, sliced
  • 1 red bell pepper, sliced (optional)
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon honey
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste


Instructions

  1. Prep: Slice the chicken and vegetables. Mince the garlic. In a bowl, whisk together soy sauce, honey, and sesame oil.
  2. Cook Chicken: Heat 1 tablespoon of oil in a skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until golden brown (5–6 minutes). Remove from pan.
  3. Cook Veggies: In the same skillet, add remaining oil. Sauté zucchini and bell pepper until tender (3–4 minutes). Add garlic and cook until fragrant (30 seconds).
  4. Combine: Add cooked chicken back to the skillet with veggies. Pour in the sauce mixture and toss everything together until heated through (1–2 minutes).
  5. Serve: Garnish with sesame seeds and green onions. Enjoy hot over rice or noodles!
