Ingredients

Scale
  • 1 cup Unsalted Butter (softened)
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar (packed)
  • 2 Eggs (room temperature)
  • 1 teaspoon Vanilla Extract
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 teaspoons Ground Cinnamon
  • 8 oz Cream Cheese (softened)
  • 1/2 cup Powdered Sugar
  • 2 tablespoons Milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the softened unsalted butter, granulated sugar, and brown sugar. Cream until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon. Gradually add this mixture to the wet ingredients until just combined.
  5. In another bowl, beat together the cream cheese, powdered sugar, and milk until smooth. This will be your delicious cheesecake filling.
  6. Take a tablespoon of cookie dough, flatten it slightly, place about a teaspoon of cheesecake filling in the center, then fold it over to form a ball. Repeat with remaining dough.
  7. Place cookie balls on the prepared baking sheet about 2 inches apart. Bake for 10-12 minutes or until lightly golden around the edges.
  8. Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
