Ingredients
- 8 oz ground beef sausage
- ½ ring Kielbasa sausage (7 oz), diced
- 2 cups frozen diced hash brown potatoes
- ½ red bell pepper, diced
- ½ green bell pepper, diced
- 1 small yellow onion, diced
- 1 medium jalapeño pepper, seeded and diced
- 4 large eggs, beaten
- 1 tbsp unsalted butter
- ½ tsp seasoned salt
- ? tsp black pepper
- ? tsp garlic powder
- ½ tsp cowboy ranch seasoning (optional)
- 4 large flour tortillas (10-inch)
- 1 cup sharp cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 1 tbsp vegetable oil for frying
Instructions
- In a nonstick skillet over medium heat, cook the ground beef sausage for 6-7 minutes until browned; add diced kielbasa and cook for another 2-4 minutes. Drain excess grease.
- In the same skillet, cook frozen hash browns for 5-7 minutes until crispy. Add diced bell peppers, onion, jalapeño, seasoned salt, black pepper, and garlic powder; cook until vegetables are tender.
- Beat eggs in a bowl; melt butter in the skillet and scramble eggs until just set.
- Warm tortillas; fill each with meat mixture, cheese, scrambled eggs, and potato-vegetable mixture. Roll tightly.
- Heat oil in the skillet over low; fry burritos seam-side down for 2-3 minutes per side until golden brown.
- Serve hot with sour cream and salsa.
