  • 1 lb ground beef (85% lean)
  • 1 tbsp extra virgin olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 2 cups fresh baby spinach
  • 12 oz dried penne or rigatoni pasta
  • 3 cups beef broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp dried Italian herbs (oregano, basil, thyme)
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large deep skillet over medium-high heat.
  2. Add ground beef, breaking it apart as it cooks until browned (about 8 minutes). Season with salt and pepper.
  3. Lower heat to medium; add onion and garlic, cooking until fragrant (about 3 minutes).
  4. Stir in sun-dried tomatoes and herbs; toast for about 2 minutes.
  5. Add pasta, beef broth, and cream; stir to combine.
  6. Bring to a gentle boil; reduce heat to medium-low. Cover and simmer for 12-15 minutes or until pasta is tender.
  7. Stir in spinach and Parmesan; cook for an additional 2 minutes until spinach wilts.
  8. Adjust seasoning as needed and serve hot.
