  • sea salt (to taste)
  • ground black pepper (to taste)
  • Oil (for frying)
  • ? cup all-purpose flour
  • ½ tsp salt
  • ¾ tsp smoked paprika
  • 2 eggs
  • ¼ tsp salt
  • ¾ cup panko crumbs
  • ¼ cup breadcrumbs
  • 1 tsp dried parsley
  • ½ tsp ground black pepper
  • ½ tsp sea salt
  • ½ tsp dried oregano
  • 1 tsp garlic powder
  • ¼ cup Parmesan cheese (freshly grated)
  • ½ cup full-fat mayonnaise
  • 3 tbsp Greek yogurt
  • 1 tsp Dijon mustard
  • 2 tbsp lemon juice
  • 1-2 garlic cloves (minced)
  • ¼ tsp black pepper
  • Pinch sea salt
  • 2 romaine hearts (chopped)
  • 1-2 French baguettes


Instructions

  1. In a bowl, mix together all dressing ingredients until smooth and creamy. Reserve about 4–5 tablespoons of this dressing to combine with chopped romaine lettuce in another medium bowl. Cover both components and refrigerate until needed.
  2. Lay the chicken cutlets on a cutting board. If uneven, gently pound them with a meat mallet or rolling pin. Season both sides with sea salt and ground black pepper.
  3. Set three shallow plates in order: In the first plate, mix together flour, salt, and smoked paprika; in the second plate, whisk eggs with additional salt until well combined; in the third plate, combine panko crumbs, breadcrumbs, dried parsley, black pepper, sea salt, dried oregano, garlic powder, and grated Parmesan cheese.
  4. Heat oil in a frying pan over medium heat. Dredge one cutlet in the flour mixture first; shake off excess. Dip into egg mixture next. Lastly, press firmly into breadcrumb mix. Repeat this process for all cutlets.
  5. Once oil is hot, carefully place chicken in pan. Fry until golden brown on one side (about 4-5 minutes), then flip to cook the other side until fully cooked through. Remove from oil and place on wire rack to drain excess oil.
  6. Slice French baguettes into portions and open them lengthwise. Spread reserved Caesar dressing inside each baguette. Place a crispy chicken cutlet on top followed by dressed romaine salad. Sprinkle extra grated Parmesan before closing sandwiches. Serve immediately.
