  • 1 lb boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1/2 cup fresh orange juice
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp sugar
  • 3 garlic cloves, minced
  • 1/2 tsp ginger powder


Instructions

  1. Pat the chicken dry and cut into bite-sized pieces.
  2. Set up a breading station: place flour in one bowl and beaten eggs in another.
  3. Coat each chicken piece first in egg, then in flour.
  4. Heat vegetable oil in a large skillet over medium-high heat until shimmering.
  5. Fry the chicken in batches for about 4-5 minutes on each side until golden brown, then transfer to a wire rack.
  6. In a small saucepan, combine orange juice, soy sauce, sugar, garlic, and ginger. Simmer until thickened (about 5 minutes).
