  • 1 rack beef ribs
  • 6 garlic cloves
  • 1/2 ginger root (peeled and sliced)
  • 5 scallions
  • 3 tbsp fruit juice (as a substitute for sake)
  • 4 tbsp mirin
  • 2 tbsp sugar
  • 6 tbsp soy sauce
  • 2.5 tbsp sesame oil
  • 1/2 tsp ground black pepper
  • 1 tsp toasted sesame seeds (for garnish)


Instructions

  1. Prepare the marinade by whisking together fruit juice, mirin, sugar, soy sauce, sesame oil, and ground black pepper in a mixing bowl until the sugar dissolves.
  2. Place beef ribs in a baking dish and pour the marinade over them, covering well. Refrigerate for at least 2 hours or overnight for best flavor.
  3. Preheat your oven to 375°F (190°C). Bake the ribs uncovered for about 2 hours or until tender, basting with leftover marinade halfway through.
  4. Let the ribs rest before slicing and garnish with toasted sesame seeds before serving.
