Ingredients

  • 2 large eggs
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract
  • ¼ cup all-purpose flour
  • ¼ teaspoon baking powder
  • 2 tablespoons granulated sugar

Instructions

  1. Separate egg whites and yolks into two bowls. Whisk yolks with milk, vanilla, flour, and baking powder until smooth.
  2. In a separate bowl, add vinegar to egg whites and whip until frothy. Gradually add sugar and beat until stiff peaks form.
  3. Gently fold one-third of the meringue into the yolk mixture, then fold in the remaining meringue until no streaks remain.
  4. Heat a nonstick pan over low heat, grease lightly, and pour batter to form pancakes. Cover and cook for about 7-8 minutes on one side; flip and cook for an additional 5-6 minutes until fully cooked.
