  • beef chuck roast
  • apple vinegar
  • pearl onions
  • carrots
  • fresh parsley
  • beef broth
  • tomato paste

Instructions

  1. Heat oil in a large Dutch oven over medium-high heat. Season beef cubes with salt and pepper, then brown on all sides. Remove and set aside.
  2. In the same pot, sauté pearl onions and carrots until softened, about 5 minutes. Add minced garlic and tomato paste; cook for 1 minute.
  3. Deglaze the pot with apple vinegar, scraping up any browned bits, and simmer for 3 minutes.
