Ingredients

Instructions

  1. Prepare the dressing by whisking together olive oil, balsamic vinegar, oregano, basil, salt, and pepper in a small bowl.
  2. Chop cucumbers into thin slices and then dice them. Cut cherry tomatoes into quarters and chop red onion into small pieces.
  3. In a large mixing bowl, combine diced cucumbers, cherry tomatoes, chopped red onion, and mozzarella cubes. Pour dressing over the mixture and gently toss to coat evenly.
