  • 1 cup diced vegetables (broccoli, carrots, red bell pepper)
  • 4 ounces softened cream cheese
  • 1/3 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried dill
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 2 large flour tortillas
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons sliced green onions


Instructions

  1. Wash and dice the broccoli, carrots, and red bell pepper into small pieces.
  2. In a mixing bowl, combine softened cream cheese and mayonnaise until smooth. Add garlic powder, dill, salt, and pepper. Mix in the diced vegetables, cheddar cheese, and green onions.
  3. Lay one tortilla flat, spread half of the vegetable mixture over it. Roll tightly from one end. Repeat with the second tortilla.
  4. Wrap each rolled tortilla in plastic wrap or parchment paper and chill in the refrigerator for about 30 minutes.
  5. Unwrap and slice into bite-sized pieces before serving.
