  • 2 lbs baby potatoes
  • 4 cloves garlic (minced)
  • 4 tbsp butter (melted)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley (chopped)
  • 1 tsp dried rosemary


Instructions

  1. Preheat your oven to 425°F (220°C). Wash and dry the baby potatoes.
  2. Cut the potatoes in half lengthwise for better browning.
  3. In a bowl, mix melted butter, olive oil, minced garlic, salt, pepper, and rosemary.
  4. Toss the halved potatoes in the garlic butter mixture until evenly coated.
  5. Arrange the potatoes cut-side down on a parchment-lined baking sheet and bake for 35-45 minutes until golden brown and crispy.
  6. Remove from the oven and sprinkle with chopped parsley before serving.
