  • 12 oz rigatoni
  • 1 lb sirloin or ribeye steak, cubed
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • Salt and black pepper, to taste
  • 2 tbsp chopped fresh parsley (for garnish)


Instructions

  1. Cook the rigatoni in salted boiling water until al dente. Reserve ½ cup of the pasta water before draining.
  2. In a skillet, heat olive oil over medium-high heat. Season steak with salt and pepper, then sear until browned. Remove from skillet.
  3. Melt butter in the same skillet and sauté minced garlic until fragrant.
  4. Stir in heavy cream and scrape up browned bits; simmer until slightly thickened.
  5. Lower heat and mix in Parmesan cheese until melted. Adjust seasoning as needed.
  6. Add rigatoni to the sauce, combining well. If too thick, use reserved pasta water to loosen.
  7. After resting, return steak to skillet and mix gently. Garnish with parsley before serving.
