  • 1 carrot (diced)
  • 1 zucchini (diced)
  • 500 ml low-sodium beef broth
  • 150 ml fat-free milk
  • 250 g low-fat cottage cheese
  • 100 g shredded sharp cheddar cheese
  • 1 chopped onion
  • 2 cloves chopped garlic
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp mustard powder
  • 1/2 tsp red pepper flakes


Instructions

  1. Heat olive oil in a large pan and sauté diced zucchini, carrot, onion, and garlic until softened.
  2. Blend the sautéed vegetables with tomato sauce and cottage cheese until smooth; set aside.
  3. In the same pan, cook the ground beef until browned; season with salt and pepper.
  4. Stir in spices such as smoked paprika and oregano to the beef mixture.
  5. Add the blended sauce along with milk and broth to the pan; mix well.
