Ingredients
- 9 tablespoons unsalted butter
- 1 1/4 cups sugar
- 1/4 cup sifted cocoa powder
- 1/2 teaspoon vanilla extract
- 1 tablespoon red food coloring
- 2 eggs
- 3/4 cup all-purpose flour
- 9 ounces cream cheese (room temperature)
- 3 tablespoons sugar for cream cheese swirl
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large bowl, melt butter and mix in sugar, cocoa powder, vanilla, food coloring, eggs, vinegar, salt, espresso powder, and flour until just combined.
- In another bowl, beat cream cheese with sugar and egg yolk until smooth.
- Pour half of the brownie batter into the prepared pan; add dollops of cream cheese mixture over it and top with remaining brownie batter. Use a knife to swirl gently.
- Bake for 25–30 minutes or until a toothpick comes out clean or with moist crumbs.
- Cool in the pan for 10 minutes before lifting out and cutting into squares.
