  • 9 tablespoons unsalted butter
  • 1 1/4 cups sugar
  • 1/4 cup sifted cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 2 eggs
  • 3/4 cup all-purpose flour
  • 9 ounces cream cheese (room temperature)
  • 3 tablespoons sugar for cream cheese swirl


Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, melt butter and mix in sugar, cocoa powder, vanilla, food coloring, eggs, vinegar, salt, espresso powder, and flour until just combined.
  3. In another bowl, beat cream cheese with sugar and egg yolk until smooth.
  4. Pour half of the brownie batter into the prepared pan; add dollops of cream cheese mixture over it and top with remaining brownie batter. Use a knife to swirl gently.
  5. Bake for 25–30 minutes or until a toothpick comes out clean or with moist crumbs.
  6. Cool in the pan for 10 minutes before lifting out and cutting into squares.
