  • 9 tbsp unsalted butter
  • 1 1/4 cups sugar
  • 1/4 cup cocoa powder
  • 1/2 tsp vanilla extract
  • 1 tbsp red food coloring
  • 1/8 tsp salt
  • 1/4 tsp espresso powder
  • 1/2 tsp vinegar
  • 2 large eggs
  • 3/4 cup all-purpose flour
  • 9 oz cream cheese (room temperature)
  • 3 tbsp sugar (for cream cheese mixture)
  • 1/2 tsp vanilla extract (for cream cheese mixture)
  • 1 egg yolk (for cream cheese mixture)


Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a mixing bowl, combine melted butter and sugar until smooth. Stir in cocoa powder, vanilla, red food coloring, salt, espresso powder, vinegar, and eggs one at a time. Mix until well combined.
  3. Fold in flour gently until just combined.
  4. In a separate bowl, beat the cream cheese until smooth. Add sugar, vanilla extract, and egg yolk; mix until creamy.
  5. Pour half the brownie batter into the prepared pan. Spoon dollops of cream cheese mixture over it, then top with remaining brownie batter. Gently swirl with a knife.
  6. Bake for about 25-30 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool completely before lifting out using parchment overhang; cut into bite-sized squares.
