  • 1.5 pounds chicken breast, cut into bite-sized pieces
  • 3 cups fresh spinach
  • 1.5 cups cherry tomatoes, halved
  • 1 large red bell pepper, diced
  • 1 medium yellow squash, sliced
  • 4 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Zest of 1 lemon
  • Salt and black pepper to taste


Instructions

  1. Dry the chicken pieces and season with salt, pepper, and half of the oregano.
  2. Heat 2 tablespoons olive oil in a skillet over medium-high heat. Sear chicken until golden-brown (about 5-6 minutes) and then set aside.
  3. In the same skillet, add remaining olive oil and sauté minced garlic for about 30 seconds.
  4. Add diced bell pepper and sliced yellow squash; cook for approximately 4-5 minutes until softened.
  5. Stir in halved cherry tomatoes and return cooked chicken to skillet along with spinach and remaining spices. Toss to combine and cook until spinach wilts (2-3 minutes).
  6. Finish with lemon zest, adjust seasoning, and serve immediately.
