Ingredients

Scale
  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 4 cups beef broth
  • 2 cups mushrooms, sliced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 4 slices of bread
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons butter

Instructions

  1. Prepare the ingredients by chopping the onion, mincing the garlic, and slicing the bell pepper and mushrooms.
  2. In a large pot over medium heat, brown the ground beef until cooked through. Drain excess grease if needed.
  3. Add the diced onions, minced garlic, sliced bell peppers, and mushrooms to the pot. Sauté for about 5 minutes until softened.
  4. Pour in the beef broth and heavy cream; stir well and bring to a gentle simmer.
  5. Season with salt and pepper to taste. Allow to simmer for about 15 minutes.
  6. For the cheesy toast, preheat your oven to 400°F (200°C). Butter each slice of bread and top with shredded cheese on a baking sheet.
  7. Bake for about 10 minutes until cheese is bubbly and golden brown.
  8. Serve hot by ladling soup into bowls alongside cheesy toast.
