  • 4 cups chicken stock
  • 1 medium onion, chopped
  • 4 to 5 ounces fresh spinach
  • 1 cup heavy whipping cream
  • 1 cup sun-dried tomatoes
  • 1 tablespoon sun-dried tomato oil
  • 1/2 cup freshly shredded parmesan cheese
  • 1 teaspoon red chili flakes
  • 5 garlic cloves, minced
  • 1/4 cup fresh basil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1/3 cup tomato paste


Instructions

  1. In a large pot or Dutch oven over medium heat, add sun-dried tomato oil. Sauté chopped onion until translucent (about 5 minutes), then add minced garlic and cook for another 30 seconds.
  2. Add paneer pasta, chicken stock, and tomato paste; stir well. Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 10-12 minutes until pasta is al dente.
  3. Stir in heavy whipping cream, fresh spinach, sun-dried tomatoes, red chili flakes, salt, black pepper, and parmesan cheese.
  4. Cook for an additional 3-5 minutes until the spinach wilts and the sauce slightly thickens. Adjust seasoning as necessary.
  5. Serve hot garnished with freshly chopped basil.
