- 17 ounces paneer pasta
- 4 cups chicken stock
- 1 medium onion, chopped
- 4 to 5 ounces fresh spinach
- 1 cup heavy whipping cream
- 1 cup sun-dried tomatoes
- 1 tablespoon sun-dried tomato oil
- 1/2 cup freshly shredded parmesan cheese
- 1 teaspoon red chili flakes
- 5 garlic cloves, minced
- 1/4 cup fresh basil
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1/3 cup tomato paste
Instructions
- In a large pot or Dutch oven over medium heat, add sun-dried tomato oil. Sauté chopped onion until translucent (about 5 minutes), then add minced garlic and cook for another 30 seconds.
- Add paneer pasta, chicken stock, and tomato paste; stir well. Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 10-12 minutes until pasta is al dente.
- Stir in heavy whipping cream, fresh spinach, sun-dried tomatoes, red chili flakes, salt, black pepper, and parmesan cheese.
- Cook for an additional 3-5 minutes until the spinach wilts and the sauce slightly thickens. Adjust seasoning as necessary.
