  • ½ cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup sparkling grape juice
  • ¼ cup whole milk
  • 1 teaspoon vanilla extract
  • ½ cup peach puree (fresh or canned)
  • 1 cup unsalted butter, room temperature (for frosting)
  • 34 cups powdered sugar, sifted
  • 34 tablespoons peach puree (for frosting)
  • 12 tablespoons sparkling grape juice (for frosting)
  • Pinch of salt
  • Fresh peach slices (for garnish)
  • Sparkling sugar (for garnish)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream together unsalted butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. In a separate bowl, mix together sparkling grape juice, whole milk, vanilla extract, and peach puree.
  6. Gradually alternate adding the dry ingredients and the wet ingredients to the butter mixture until just combined.
  7. Fill cupcake liners about 2/3 full with batter and bake for 18–20 minutes or until a toothpick comes out clean.
  8. Allow the cupcakes to cool completely before frosting with peach buttercream made by beating room temperature unsalted butter and gradually adding powdered sugar, peach puree, and sparkling grape juice.
  9. Garnish with fresh peach slices and sprinkle with sparkling sugar.
