Instructions
- Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream together unsalted butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- In a separate bowl, mix together sparkling grape juice, whole milk, vanilla extract, and peach puree.
- Gradually alternate adding the dry ingredients and the wet ingredients to the butter mixture until just combined.
- Fill cupcake liners about 2/3 full with batter and bake for 18–20 minutes or until a toothpick comes out clean.
- Allow the cupcakes to cool completely before frosting with peach buttercream made by beating room temperature unsalted butter and gradually adding powdered sugar, peach puree, and sparkling grape juice.
- Garnish with fresh peach slices and sprinkle with sparkling sugar.
