Description

Ingredients

  • Potatoes
  • Eggs
  • Fresh parsley
  • Onion
  • Garlic
  • Ground cumin
  • Paprika
  • Salt
  • Black pepper
  • Vegetable oil (for frying)


Instructions

  1. Boil the peeled potatoes in salted water until fork-tender (about 20 minutes). Drain and let cool slightly before mashing until mostly smooth.
  2. In a large bowl, combine the mashed potatoes with eggs, chopped parsley, onion, garlic, cumin, paprika, salt, and pepper. Mix until well blended.
  3. With wet hands, shape the mixture into small oval patties (2-3 inches long) and let them rest for 10 minutes.
  4. Heat 1/2 inch of vegetable oil in a frying pan over medium-high heat until shimmering.
  5. Carefully add the patties in batches to avoid overcrowding. Fry for 3-4 minutes per side until golden brown. Drain on paper towels and serve hot.
