  • 8 oz wide Lo Mein noodles
  • 1 lb ground beef
  • 1 tablespoon peanut oil
  • 4 cups coleslaw mix
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons rice vinegar + sugar (as a mirin substitute)
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha


Instructions

  1. Cook Lo Mein noodles according to package instructions; rinse under cold water and set aside.
  2. Heat peanut oil in a large skillet over medium heat. Add ground beef and cook until browned, stirring occasionally.
  3. In a bowl, whisk together chicken broth, mirin substitute, dark soy sauce, garlic, ginger, sesame oil, and sriracha.
  4. Add cooked noodles and coleslaw mix to the skillet with beef. Pour in the sauce mixture.
  5. Toss everything together for about 2-3 minutes until well coated.
  6. Garnish with sliced green onions before serving warm.
