- 1 1/2 cups graham cracker crumbs

- Zest of 1 lemon
- 3 tbsp fresh lemon juice
- 1/4 cup sour cream or Greek yogurt
- 1/2 cup fresh or frozen raspberries
- 1 tbsp granulated sugar
- 1 tsp lemon juice
Instructions
- Preheat the oven to 325°F (163°C) and line a 9×9-inch baking pan with parchment paper.
- Mix graham cracker crumbs, sugar, and melted butter. Press firmly into the pan and bake for 8–10 minutes until golden.
- In a saucepan over medium heat, combine raspberries, sugar, and lemon juice to make the raspberry swirl. Mash until syrupy, strain to remove seeds, and set aside.
- Beat cream cheese and sugar until smooth; add eggs one at a time, mixing well. Incorporate vanilla extract, flour, lemon zest, lemon juice, and sour cream.
- Pour cheesecake batter over the crust; drop spoonfuls of raspberry puree and swirl gently with a knife.
- Bake for 35–40 minutes until set but slightly jiggly in the center.
- Cool at room temperature for an hour before refrigerating for at least three hours or overnight before serving.
