  • 1 packet (2 ¼ tsp) active dry yeast
  • ¼ cup granulated sugar
  • ½ tsp salt
  • ½ cup warm milk
  • 4 tbsp unsalted butter, softened
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1 cup raspberry preserves or jam
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp butter, melted (for brushing)
  • ¾ cup powdered sugar
  • 12 tbsp lemon juice
  • 1 tbsp milk or cream


Instructions

  1. Activate the yeast by combining warm milk and sugar in a bowl; sprinkle yeast on top and let it foam for 5–10 minutes.
  2. Mix flour, sugar, and salt in a large bowl. Add foamy yeast mixture, softened butter, eggs, vanilla extract; mix until a shaggy dough forms.
  3. Knead dough on a floured surface for 10–12 minutes until smooth and elastic. Let rise in a greased bowl covered with a damp towel for 1 to 1½ hours.
  4. For the filling, cook raspberry preserves with cornstarch and water until thickened; cool completely.
  5. Roll out dough into a rectangle; spread cooled filling evenly over it. Roll into a log and twist halves together before placing in a greased loaf pan for second rise (30–40 minutes).
  6. Preheat oven to 350°F (175°C). Bake loaf for 35–40 minutes until golden brown; cool before glazing.
