Ingredients

Scale
  • 1 cup unsalted butter
  • 2/3 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter (for caramel)
  • 1/2 cup heavy cream
  • 1 teaspoon flaky sea salt

Instructions

  1. Cream the softened butter and sugar until light and fluffy, about 3 minutes. Add vanilla extract and mix well.
  2. In another bowl, whisk together flour and salt. Gradually add this to the butter mixture until just combined.
  3. Chill the dough for 30 minutes while preheating your oven to 350°F (175°C) and lining baking sheets with parchment paper.
  4. Roll the dough into 1-inch balls, placing them on prepared sheets about 2 inches apart. Create an indentation in each ball using your thumb.
  5. Bake for 10–12 minutes until edges are golden. If indentations puff up, gently press them down while warm.
  6. For caramel, melt 1 cup sugar over medium heat until amber-colored without stirring. Add butter, whisking until incorporated, then slowly add cream while whisking.
  7. Allow caramel to boil for one minute before removing from heat, letting it cool slightly before spooning into cookie indentations. Sprinkle with flaky sea salt.
