Ingredients

  • Heavy cream
  • Whole milk
  • Granulated sugar
  • Large egg yolks
  • Unsalted butter
  • Vanilla extract
  • Sea salt flakes
  • Light corn syrup


Instructions

  1. Prepare the Caramel: In a heavy-bottomed saucepan, combine 1/2 cup sugar and light corn syrup over medium heat. Cook without stirring until deep amber, about 8-10 minutes. Remove from heat and whisk in unsalted butter until smooth.
  2. Make the Custard Base: Heat heavy cream and whole milk until just simmering. In a bowl, whisk egg yolks with remaining sugar until pale. Gradually add hot cream mix while whisking to temper.
  3. Combine and Strain: Return mixture to low heat, stirring until it coats the back of a spoon (about 170°F). Strain through a fine-mesh sieve into another bowl, stir in vanilla extract, and cool completely.
  4. Swirl in Caramel: Once cooled, swirl caramel into custard base and pour into Ninja Creami pint container. Freeze for at least 24 hours.
  5. Process and Serve: After freezing, process on Ice Cream setting using Ninja Creami. Use Re-spin if needed for extra creaminess. Serve topped with sea salt flakes.
