- Heavy cream
- Whole milk
- Granulated sugar
- Large egg yolks
- Unsalted butter

- Prepare the Caramel: In a heavy-bottomed saucepan, combine 1/2 cup sugar and light corn syrup over medium heat. Cook without stirring until deep amber, about 8-10 minutes. Remove from heat and whisk in unsalted butter until smooth.
- Make the Custard Base: Heat heavy cream and whole milk until just simmering. In a bowl, whisk egg yolks with remaining sugar until pale. Gradually add hot cream mix while whisking to temper.
- Combine and Strain: Return mixture to low heat, stirring until it coats the back of a spoon (about 170°F). Strain through a fine-mesh sieve into another bowl, stir in vanilla extract, and cool completely.
