  • 1 lb smoked sausage (chicken, turkey, or beef), sliced
  • 2 cups long-grain white rice
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 large onion, diced
  • 3 cups chicken broth
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/4 cup fresh parsley, chopped


Instructions

  1. Heat a large cast iron skillet over medium-high heat. Add the sliced smoked sausage and cook for about 4-5 minutes until browned.
  2. Add the diced onion and bell peppers; sauté for 3-4 minutes until softened. Stir in minced garlic, paprika, and cayenne pepper for an additional 30 seconds.
  3. Add the rice to the skillet, stirring well to coat with sausage fat. Toast the rice for about 2-3 minutes until lightly golden.
  4. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 18-20 minutes until the rice is tender.
  5. Remove from heat and let it rest for 5 minutes before fluffing with a fork. Stir in fresh parsley.
