  • 2 1/2 tbsp pickle brine
  • 1 1/2 tbsp apple cider vinegar
  • 1/4 teaspoon smoked paprika
  • 2 tsp honey
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp salt


Instructions

  1. Cook macaroni in salted boiling water until al dente; drain and cool.
  2. Boil eggs in cold water until hard, then place in an ice bath for easy peeling.
  3. Chop celery, pickles, red onion, and parsley; set aside.
  4. Mix Greek yogurt, pickle brine, Dijon mustard, apple cider vinegar, honey, smoked paprika, pepper, and salt in a bowl until smooth.
  5. Combine cooled macaroni, chopped eggs, and vegetables in a mixing bowl; fold in the dressing gently.
  6. Chill for at least one hour before serving to enhance flavors.
