- 8 sun-dried tomatoes, dried and chopped
- 4 generous tablespoons pesto
- Butter, as required

- Gather all ingredients, ensuring mozzarella slices are thin and dried.
- On a clean surface, lay out four slices of sourdough bread. Spread one tablespoon of pesto on each slice.
- Layer the sliced mozzarella evenly over two slices and sprinkle chopped sun-dried tomatoes on top.
- Place the remaining two sourdough slices on top to form sandwiches.
- Heat a non-stick skillet over medium heat and add butter until melted.
