  • 8 thick slices of sourdough bread
  • 3 balls fresh mozzarella (125g each), sliced thin and dried
  • 8 sun-dried tomatoes, dried and chopped
  • 4 generous tablespoons pesto
  • Butter, as required


Instructions

  1. Gather all ingredients, ensuring mozzarella slices are thin and dried.
  2. On a clean surface, lay out four slices of sourdough bread. Spread one tablespoon of pesto on each slice.
  3. Layer the sliced mozzarella evenly over two slices and sprinkle chopped sun-dried tomatoes on top.
  4. Place the remaining two sourdough slices on top to form sandwiches.
  5. Heat a non-stick skillet over medium heat and add butter until melted.
  6. Carefully place each sandwich in the skillet and cook until the bottom is golden brown (about 3-4 minutes). Flip using a spatula, adding more butter if needed, and cook until both sides are crispy.
  7. Remove from heat, slice in half, and serve hot.
