  • Spanish chicken sausage
  • Yukon Gold potatoes

Instructions

  1. In a large pot over medium heat, cook sliced Spanish chicken sausage for 5-6 minutes until crispy. Remove and set aside.
  2. In the same pot, sauté diced onion, red bell pepper, and green bell pepper for 8-10 minutes until softened. Add minced garlic and smoked paprika; cook for another minute.
  3. Stir in cubed Yukon Gold potatoes and pour in chicken broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until potatoes are tender.
  4. Return the chicken sausage to the pot along with heavy cream. Season with salt and pepper, letting it simmer for an additional 5 minutes.
