Description

Spicy Cucumber Salad is a vibrant and refreshing dish that brings a burst of flavor to any meal. This quick and easy salad features crunchy cucumbers tossed in a zesty garlic-soy dressing, making it an ideal side dish, appetizer, or healthy snack.


Ingredients

  • 1 green onion
  • Sesame seeds
  • 1 ½ tbsp low-sodium soy sauce
  • 1 ½ tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp honey or maple syrup
  • 2 large garlic cloves
  • 1 tsp crushed or full red chili flakes


Instructions

  1. Slice cucumbers accordion-style using chopsticks to guide your cuts, creating thin diagonal slices. Alternatively, use a mandolin for even slicing. Place in a mixing bowl.
  2. In a small bowl, whisk together low-sodium soy sauce, rice vinegar, sesame oil, honey (or maple syrup), minced garlic, and chili flakes until well combined.
  3. Pour the dressing over the cucumbers and gently toss to coat without breaking them apart. Garnish with sliced green onions and sesame seeds before serving.
