  • 1 lb (450g) cooked shredded chicken
  • 4 cups chicken broth
  • 1 (8 oz) block cream cheese, softened and cubed
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese (optional)
  • 1/2 cup heavy cream
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • Extra cheddar (for topping)
  • Chopped jalapeños (for topping)
  • Green onions (for topping)


Instructions

  1. In a large pot, heat olive oil over medium heat and sauté diced onion and chopped jalapeños for about 4–5 minutes until softened.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Stir in shredded chicken and chicken broth; bring to a gentle boil, then reduce heat and simmer for 10 minutes.
  4. Lower heat further and gradually stir in cream cheese until melted. Add cheddar cheese and heavy cream, mixing until smooth.
  5. Season with smoked paprika, salt, and pepper to taste; let it simmer for another 5–10 minutes.
  6. Serve in bowls, garnished with extra cheese or chopped green onions.
