- 12–15 jumbo pasta shells
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese (divided)
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 cups fresh spinach (roughly chopped) or 1 cup frozen spinach (thawed and drained)
- 2 cloves garlic (minced)
- 1 teaspoon Italian seasoning
- Salt and freshly ground black pepper to taste
- 2 cups marinara sauce
- 1 tablespoon olive oil
- Fresh basil leaves for garnish (optional)
Instructions
- Cook the jumbo pasta shells in salted boiling water until al dente, about 8–10 minutes. Drain and set aside.
- In a mixing bowl, combine ricotta, half of the mozzarella, grated Parmesan, and egg; mix well.
- Sauté minced garlic in olive oil, add chopped spinach until wilted. Mix with cheese mixture; season with Italian seasoning, salt, and pepper.
- Preheat oven to 375°F (190°C). Spread 1 cup of marinara sauce in a baking dish.
- Fill each shell with the ricotta-spinach mixture and place them in the dish. Top with remaining marinara sauce and cover with foil.
- Bake for 20 minutes; uncover and bake for an additional 10 minutes.
