- 1 tsp ground cumin
- 1/2 tsp garlic powder or 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1 cup sweet corn kernels
- 1/4 cup sliced red onion
- 1/2 cup sour cream, separated
- 2 tbsp mayonnaise
- 1 tsp chili powder
- Salt and pepper, as needed
- 1 tbsp lime juice (to taste)
- 3 cups prepared rice
- Fresh cilantro leaves
- Lime wedges (from 1 lime)
Instructions
- In a mixing bowl, combine lime juice, avocado oil, chili powder, cumin, garlic powder (or minced garlic), salt, and black pepper. Add chicken thighs and coat well. Marinate for at least 15 minutes.
- Heat a skillet over medium heat and cook marinated chicken for about 6-7 minutes on each side until golden brown and cooked through. Let rest before slicing.
- In the same skillet, sauté sweet corn and sliced red onion for about 5 minutes until charred. Season with salt and pepper.
