  • 1/4 cup unsalted butter, melted
  • 3 1/2 to 4 cups all-purpose flour
  • Vegetable oil (for frying)
  • Powdered sugar (for dusting)


Instructions

  1. In a mixing bowl, combine warm milk, yeast, and a pinch of sugar; let it sit until foamy (5-10 minutes).
  2. Whisk in remaining sugar, egg, vanilla extract, salt, and melted butter into the yeast mixture.
  3. Gradually add flour until a soft dough forms. Knead on a floured surface for 5-7 minutes until smooth.
  4. Place dough in a greased bowl, cover, and let rise in a warm spot for about 1 to 1.5 hours or until doubled.
  5. Roll dough out to about 1/4 inch thick; cut into squares or rectangles (2-3 inches).
  6. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry beignets for 1-2 minutes per side until golden brown.
  7. Remove with a slotted spoon and drain on paper towels; dust with powdered sugar before serving.
