  • 1 cup evaporated milk
  • 1 cup granulated sugar
  • 3 large egg yolks
  • ½ cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 ½ cups sweetened shredded coconut
  • 1 ½ cups chopped pecans, toasted


Instructions

  1. Preheat your oven to 350°F (175°C) and grease two cake pans.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add eggs and vanilla extract, mixing well.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this mixture to the creamed mixture, alternating with buttermilk until smooth.
  4. Pour the batter into prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
  5. For the cheesecake center: Beat cream cheese and sugar until smooth; add eggs, vanilla extract, and sour cream.
  6. Once the cake layers cool slightly, pour the cheesecake filling over one layer in each pan and bake again for an additional 15-20 minutes.
  7. To make the frosting: Combine evaporated milk, sugar, egg yolks, and butter in a saucepan over medium heat; stir until thickened. Remove from heat and mix in vanilla extract, coconut, and pecans.
  8. After cooling completely, frost the cake layers with the coconut-pecan mixture before serving.
